A Super Simple Breakfast Recipe

Hello! I wanted to thank everyone for their friendly and super helpful comments on Facebook and here on the blog! I've only just started blogging and it is so nice to get the encouragement and positivity, so THANK YOU!



Today I have a really simple recipe. Its something I had when we were in London last year and I've had in my head ever since. I see various versions of this recipe online, some of which I have tried and this one that I have tailored so it works for me because it is simple and doesn't need to be precise!

Here's what you need:
  • A Mason jar.
  • 1/3-1/2 cup of rolled oats.
  • 1/3-1/2 cup of milk (or almond or soy milk). 
  • 1 tbsp chia seeds. 
  • 1 tsp honey or agave (optional)
  • 1/2 cup yogurt. (I used a honey orange flavored greek yogurt)
  • 1 handful blueberries frozen or fresh (any berry or fruit would work)
  • 1 tbsp slivered almonds (or any nuts)                                                                                               

You just pile it all in the the mason jar starting with the oats then the milk, chia seeds and on down the list with the slivered almonds on top.



Put the top on the jar and then put it in the fridge to sit overnight. The oats will soak in the milk and soften. The chia seeds will swell up and are a good source of Omega 3s, fiber and also help to make you feel full. The greek yogurt is higher in protein than regular yogurt and the nuts also give you some protein as well and of course there are antioxidants in the blueberries. I like this recipe because it has a little bit of everything and so it feels like a complete meal.



You can go crazy with it and add in cinnamon or citrus zest. You could change up the fruits or the flavor of the yogurt. Bananas are also amazing with the blueberries. Strawberries are in season right now and the ones I buy in the markets are tasting AMAZING! You could use flax seed instead of the chia seeds. You really can't go wrong.



I eat it right out of the jar because I'm always on the go in the morning with trying to get Archie dressed and out the door to school. This recipe has been a lifesaver to me lately. Archie also loves it and it sure is nice to not have to prepare breakfast in the morning and to have it ready for him right when he gets up!

If you like to hit the snooze button a few times before crawling out of bed then this is also a great (and healthy) option to grab on your way out the door to eat at your desk at work.

  2. That was absolutely amazing. The yogurt I found in the grocery store was only in natural flavor, so i used mango and orange curd instead. Also, I added some cinnamon and mixed the blueberries with raspberries. Thanks Jenna, you're a genius.
