Yummy Fall Recipe

My mom bought me this cookbook last year. I was cleaning out the boxes of books in the library room and I was so excited to re-discover it. Its a cookbook and it is easily my favorite one.

Its called The Forest Feast and it is so beautifully designed, photographed

and illustrated.

This here is my favorite recipe. The Apple & Honey Galette.

It is seriously so good! The Brie balances out the sweetness making it feel more like a snack or a meal than a dessert.

I used my favorite pie crust recipe that I use for everything which you can find here. You can also just buy one at the store if you don't feel like making your own.

Archie helped me put this one together (he loves it too). Here's the recipe:
  • Preheat the oven to 350.
  • Pie crust dough for one pie. Roll it out and place on a baking sheet.
  • 1/2 cup slinly sliced Brie cheese to cover the dough.  
  • 2 thinly sliced apples fanned out to cover the cheese layer.
  • Sprinkle 1 Tbsp brown sugar on top..
  • Sprinkle 1/2 Tsp cinnamon.
  • Sprinkle 3 Tbsp sliced almonds (I've used walnuts too).
  • Dot with butter and drizzle with honey. 
  • Bake for 20-25 minutes until golden. 
  • Garnish with pomegranate seeds.  (I literally called multiple grocery stores to find the ones that had pomegranates, so I could make this!)

Here it is ready to go in the oven!

While this is my favorite recipe from this book, there are so many other great ones in it. A ton of salads that are delicious. I will definitely be posting more from this this book in the future!

  1. oh my - I'll have to try this!! maybe I'll substitute the Brie for some other cheese as I'm not too keen on it, but that sounds soooo good.. def a plan for next weekend (plus getting some autumn/halloween decorations up...) :D

    1. Hmmm... yes, I'm wondering what other cheese would be good. Maybe gruyere?
